Homestyle Beef Stew: A Classic Comfort Food Recipe
Ingredients:

pounds beef stew meat, cut into 1-inch cubes

cup all-purpose flour

tablespoons olive oil

large onion, chopped

cloves garlic, minced

cups beef broth

cup red wine (optional)

carrots, peeled and sliced

potatoes, peeled and diced

teaspoon dried thyme

bay leaf

and pepper to taste

cup frozen peas

tablespoons tomato paste
Fresh
parsley, chopped (for garnish)
Instructions:
Prepare the Beef: In a large bowl, toss the beef cubes with flour, salt, and pepper until they are well coated.
Brown the Beef: Heat olive oil in a large pot over medium-high heat. Add the beef in batches and brown on all sides. Remove the browned beef and set aside.
Sauté Vegetables: In the same pot, add the chopped onion and cook until translucent. Add the minced garlic and cook for another minute.
Deglaze and Simmer: If using wine, pour it into the pot to deglaze, scraping up any browned bits. Add the beef broth, browned beef, carrots, potatoes, thyme, and bay leaf. Bring to a boil, then reduce heat to low and simmer, covered, for about 1.5 hours,
or
until the beef is tender.
Add Final Ingredients:
Stir in the tomato paste and frozen peas. Cook for an additional 10 minutes. Remove the bay leaf and adjust seasoning with salt and pepper.
Garnish
and Serve: Serve the stew hot, garnished with freshly chopped parsley.
